Protein Muffins

Are you trying to lose weight? Or do you have a sweet tooth and trying to find a healthy alternative for a nutritious snack? Perhaps you are looking for a healthy snack to add to your child’s school lunch box?

 

Then you have to try this high protein muffin recipe which is so simple to make. The recipe has zero added sugar, it is 100% natural and, also, you will never feel guilty for eating a few extra ones!

 


High protein muffins

Preparation: 20 mins

Baking: 45 mins


Ingredients:


3 cups of almond flour

2 tsp soda bicarbonate

1 tsp baking powder

4-5 ripe bananas

4 eggs

½ cup olive oil (or any other cooking oil eg melted coconut oil, etc)

1 tsp sea salt

1 tsp cinnamon powder

1 tsp vanilla extract

Optional: 1 tsp honey


Preparation


1.       Heat the oven up to 180C.


2.       If you are using a food processor, put all ingredients together and blend, when the texture is smooth then it is ready to pour into cup cake cases and bake.


NB: depending on your food processor, you might need to slice the bananas first to avoid lumps. But if there are a few lumps, it bakes just as well and tastes great!


3.       If you are not using a food processor, then mix the almond flour, cinnamon power, baking powder, soda bicarbonate and sea salt and leave to one side.


4.       In a different bowl, mash the bananas with a fork, potato masher or a spatula. Add the eggs, oil, vanilla extract and mix with a hand held blender until smooth and no banana lumps.


5.       Combine the ingredients of the two bowls together and blend with the mixer.


6.       Pour into cup cake cases and bake for 30-45 mins at 180C. Use a cocktail stick to insert into one cupcake to test if baked through. The muffins are ready when the cocktail stick comes out clean without any dough sticking on it.
